Diversity is the key for keeping a good balance. Our predecessors well knew this.
The old plantation standing right before the buildings has set the tone since generations.
Olive trees thrive there.
Another orchard has been planted with Tanche olive trees, which is the best adapted home variety to these soils deemed appropriate.
Olives are manually picked with great care not to harm the trees, and then brought and pressed by a young miller in the village nearby.
The oil extracted only from our olives picked at a perfect level of maturity reveals a sweet and fruity flavor and great purity, without undergoing any chemical process.
